Baked Salmon



Baked herb salmon with wild rice and a fresh salad.  It's a quick 30 min meal that you can make in a pinch and boy is it delicious.  



Ingredients:

  • Salmon (I get mine from Costco)
  • Mayonnaise 
  • Basil
  • Salt 
  • Pepper
  • Rice Roni : Long Grain and Wild Rice (found at any grocery store)
  • cherry or grape tomatoes 
  • cucumber 
  • onion
  • vinegar
  • olive oil





I cut my salmon for a serving size of two.  The remainder of the salmon I put in a freezer zip-lock to use for a different time.  Note: I bake my salmon from frozen, but you can bake it using defrosted salmon for quicker baking.


Mayonnaise, Basil, salt and pepper.


Spread about 1/2 of a Tablespoon of mayonnaise all over the fish.  Then lightly season with salt, pepper and dried basil leaves.  


Bake @ 425 for about 25-30 min.  What I like to do to give it more color is broil it on high for about a min after its done baking.  Make sure you watch it so it doesn't burn during this time.



Long Grain and Wild Rice is my favorite rice from Rice Roni, it also pairs perfectly with salmon.


In a saute pan with a lid pour your rice, water and add your butter.  Let simmer and then cover with a lid and leave on low heat for 30 min.



Gather your ingredients for your salad.

Ingredients 
  • Olive oil: Costco
  • Vinegar
  • Onion ( red or yellow )
  • Salt
  • Pepper
  • Cucumber
  • Cherry or Grape Tomatoes 



For the salad slice your vegetables and add them to a bowl.  Then stir in 1 teaspoon olive oil, 1 teaspoon vinegar, salt/pepper to taste and you're done!



Take your fish out of the oven and serve while warm.
